I love fruits. Especially in my desserts. Blueberries are considered a super food due to their health benefits. That is reason enough to help yourself to a second serving of this delightful muffin. Enjoy them hot with a dollop of butter, with your coffee. Or as a dessert. Warm them up slightly and top them with some vanilla ice-cream. Both ways its delicious.

Ingredients:
1 and 1/2 cup all purpose flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup oil (You can also use butter here)
1/3 cup milk
1 egg (For egg less version use 1/3 cup of applesauce or 1/2 a mashed banana)
1 cup fresh blueberries (For the frozen blueberries, coat them in flour first to prevent them from sinking to the bottom of the muffins)
Method:
Preheat your oven to 400F. This recipe will make 8 large muffins. For a 12 whole muffin tray, make sure to fill the empty holes with water so your muffins do not dry out or burn.
Mix all the dry ingredients with the wet ones making sure not to over mix. Muffins tend to dry out if you over mix the batter. Slowly fold in the blueberries. Grease your muffin tins or line them with paper cups or muffin liners and pour in the mix, filling them right up to the top. Bake for 20 – 25 minutes till the toothpick inserted comes out clean.
Let them rest in the muffin tray for 2 – 3 minutes before taking them out. Enjoy.
